Serves 4
Ingredients:
2lbs. Chicken Wings (separated at joints)
7 tsp. Old Bay Seasoning
1 tsp Chinese 5 spice
1 cup Dark Brown Sugar
1 tsp Paprika
Fresh Cracked Pepper (to taste)
Kosher Salt (to taste)
Parchment Paper
Directions:
- Rinse wings under cold water
- Dry well with paper towels and place wings on a wire rack for about 10 minutes
- Preheat oven to 425 degrees
- In a bowl add all dry ingredients and mix well with a whisk to make rub. Taste rub to determine if heat is at a desired level, more heat needs more Old Bay less heat requires more Brown Sugar
- Transfer all of the rub to a loaf pan (or something close in size)
- Line a large rectangular baking pan with parchment paper and place wire rack inside
- Adding 1 wing at a time to loaf pan, shake…..coating both sides of the wing evenly and densely, pushing down at times to get a good coat
- Transfer coated wing to wire rack, leaving room between wings (use 2 pans if needed). Repeat until all wings are coated
- Place pan(s) in oven for about 15 -20 minutes (until almost fully cooked)
- Remove pans from oven and let wings sit for at least 5 minutes on rack
- Add wings to deep fryer in small batches (careful not to crowd) set at 375 degrees and cook until dark (about 5 minutes)
- Let wings cool for 5 minutes for that crispy texture.
